Mini Pecan Pies

Here is another party favorite. This one went by pretty quickly with whipped cream on top. If you are serving for al fresco gathering or if you are going to make it for an all day party like I did, you can skip the whipped topping.

Cream Cheese Pastry

4 oz cream Cheese

1/2 stick of Cutter

1 cup All purpose Flour

Pecan filling

1/4th cup Maple syrup

1/2 cup brown sugar

1 tsp vanilla extract

1 large egg

3/4th cup pecans or more as required

pinch of salt

Pulse the cream cheese and butter together in a food processor until combined. add the flour slowly and mix until dough is formed. Make 24 equal portions of the dough. take the mini muffin pan and press each clump of dough so it forms the shape of a mini muffin crust. then add the filling to each and make sure fill each cup to the brim.

Bake for about 25 to 27 minutes until browned. Wait for it cool slightly and remove. It almost slides out.
