Sugar Cookies with Royal icing

My daughter turned 6 this week. A big milestone for her since she already started first grade and all the kids in her class are 6 or 7 already.


We had Frozen theme. there was Vanilla and Chocolate cake. Vanilla cupcakes with cream cheese icing. A full candy bar and Sugar cookies frosted with blue. 



Sugar Cookies

  • 1 cup butter
  • 1 cup powdered sugar
  • 1 egg, beaten
  • 1 ½ tsp. almond extract
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 2 ½ cups sifted flour


Cream butter. Add powdered sugar. Blend in egg, almond extract, vanilla, salt and flour. Chill dough until firm. Roll to ¼” thickness on well-floured surface. Cut with cookie cutters. Place on greased cookie sheets. Bake at 375° for 8-10 min. Cookies should not brown. Frost and decorate when cool.

I refrigerated the dough for about 4 hours which I would highly recommend.

Royal icing

  • 4 cups powdered sugar
  • 2 tbsp. meringue powder
  • 6 to 7 tbsp. water
  • Royal Blue color (I used Wilton)
Sift the sugar. Pour all ingredients in the stand mixer with paddle attachment and mix at medium to high speed for a few minutes until icing has lost the lustrous appearance. Take out as much icing that you are going to use right away and transfer rest of the contents to an air tight container.
Check for desired consistency in icing , add any color and fill in the icing bottle and flood the cookies with base color. Remember to add only a drop or two of water each time when you are thinning out the icing.
I used slightly thicker icing for designs on top of the base color. I used tip numbers 1 and 3.
