Almond Chia Seed Muffin

All purpose flour 2/3 cup

Almond meal 1/2 cup

Baking powder 1tsp

Sugar a little over 1/4 the cup

Lemon zest of 1 Lemon

Egg 1 Large

Canola Oil 1/4th cup

Sour Cream or Yogurt 1/4th cup

Chia seeds 1 1/2 Tbsp

Salt to taste

Vanilla extract 1/2 tsp

Almonds for Garnish (optional)


Preheat oven to 325 degrees. Line muffin pan with liners. In a stand mixer, add both Flours, Baking powder, Salt, Sugar and Lemon zest and mix. Add the Egg and mix again. Then add Vanilla extract, Sour cream and mix. Then slowly add oil until mixed. All the mixing should be done at a low to medium speed. In the end, add Chia Seeds and fold gently.

Pour the mixture in muffin pans and bake for about 20 to 22 minutes until firm and knife comes out clean.

Tastes great with a cup of coffee.
