Last week I was forced to take a break from all the cooking and running and just rest up for a couple of days. Yes, you guessed it right, I was really sick. Being sick is never good but when you do not realize your body needs a break, nature finds its own way to make you slow down. The down time also provides time to reflect and re adjust the goals to keep you on a correct path. So, here is to a new beginning. Well, sort of.
I had made this simple but great tasting Orange cake before I got sick but never got a chance to post it. Hope you love it as much as my family did.
5 to 6 Mandarin oranges
Almond Meal 2 1/3 cups
Sugar 1 Cup
Baking Powder 1 Tsp
Vanilla Extract 1 Tsp
Salt a pinch (optional)
Put the Mandarin Oranges in a pot with enough water to cover, bring to boil and let it cook for about 2 hours. Keep adding water as the level goes down. Once cooled, add the whole oranges in a chopper/grinder and make a chunky paste. Keep aside.
Preheat oven to 375 degrees.
In a Springform pan, place parchment paper with about 2 inches overhang.
Beat the eggs in a Stand mixer, add sugar, Vanilla, Baking powder and Almond Meal. Once combined, add the oranges and mix. Pour this mixture to the cake pan and bake for 50 to 55 minutes.
When cooled, remove the cake using the sides of parchment, rather than dumping it on a plate as this is a dense cake and will break easily.
