Week-night Noodles

Last weekend, my daughter wanted to visit the Zoo so badly that she was at her best behaviour the entire week leading to the week-end. All home work done on time, no fighting with the little one, no problems taking shower on her own. It was amazing.

We came back pretty late and everyone was tired and hungry including me. I made these Noodles as a one pot meal.These would also be perfect after a tiring work day especially when you get dragged into a last minute meeting and then have to think about what to make for dinner.

Ingredients:

Egg Noodles 8 Oz package

Stir fry vegetable frozen package 8 oz

Red Chilis 2 (optional)

Sherry Vinegar 2 Tbsp

Soy Sauce 2 Tbsp

Peanut Butter 1 Tbsp

Roasted and crushed peanuts about 1/4 cup

Olive Oil 2 Tbsp

Canola Oil 1 Tbsp

Salt and Pepper to taste

Lemon Juice 1 tsp

Directions :

Cook the Noodles as per package instructions and set aside or preferably cook them side by side when you are preparing rest of the ingredients.

In a sauce pan,heat Canola oil and add Red chilies and saute for 30 seconds. Then add all the veggies directly from the package. Saute for about 5-6 minutes until tender. Take off the heat.

In a bowl, add Vinegar, Soy Sauce, Olive Oil, Peanut Butter, Salt and Pepper. Whisk for couple of minutes until well mixed. Add this mixture to hot veggies. Add Peanuts and squeeze Lemon Juice. In the end, add the prepared noodles and mix well. Serve warm.
