This recipe is so easy that I am not even sure I should even post it. It comes together very quickly and you can make it even for a large crowd of people within a blink of an eye. Well, you know what I mean.
Makes 3 good size servings
1 Minute Tapioca Pudding mix 3 tbsp
Sugar any kind 1/3 cup
Egg 1 beaten
Coconut Extract 1 tbsp
Pineapple slices about 2 to 3 per serving
Coconut shredded for garnish (optional)
1 Minute tapioca has its own instructions on how to prepare the pudding. I used the microwave method. Mix Tapioca, Sugar, Milk and Egg in a microwavable container and Microwave for 12 minutes stirring thoroughly every 3 minutes. Let it cool completely. Cover with a plastic wrap and refrigerate to chill.
Grill Pineapple Slices on stovetop or outdoor grill whichever is available. Serve the pudding topped with grilled pineapple slices and shredded coconut. Enjoy!!
