These cupcakes need no introduction. I ran about 4 miles in the morning only to be able to have cupcake batter that I was going to make for this cake. I probably had 2 cupcakes worth of batter while in the process of making these. Well, we do need to indulge once in a while, right? Let me just say these cupcakes will make your workout worthwhile.
Strawberries about 8 pureed, no need to strain
Sugar 1 1/3 cups
Butter 1 1/2 stick
All Purpose Flour 1 1/2 cups
Yogurt 1/2 cup preferably full fat
Vanilla Extract 1 tsp
Baking Powder 1 tsp
Preheat oven to 350 degrees. Line a 12 cup cupcake pan with cupcake liners.
Ina bowl, mix flour and baking powder and keep aside.
In a stand mixer, cream butter and sugar. Add one egg at a time. Mix well. Then add Vanilla extract, yogurt and strawberry puree. Mix well. Now slowly add mixture of flour 1/4 cup at a time and mix on medium speed until well combined.
Scoop the batter equally in cupcake pan and bake for about 22 minutes.
You can use your favorite buttercream icing or whipped cream icing on top. Enjoy
