Tomato Pulav with Chickpeas


Tomato Rice or Tomato Pulao is one of the easiest one pot meals. Its easy enough and feeds the crowd. I added Chickpeas to add some protein. Feel free to add whatever vegetables you have on hand. 

I would recommend using Instapot if you are having company over or if you are trying to make it right before heading out for a Soccer game but will be back exactly at lunch time wondering what to feed the kids.

I like to serve this dish with Raita made with Cucumber, Yogurt and very little grated Onion.

The steps in Preparation stage, can be done a few hours in advance. Refrigerate the cut veggies.

Servings: about 4


  • Basmati Rice 1 cup
  • Tomatoes 2 small Roma tomatoes
  • Onion 1 medium
  • Chickpeas ½ can
  • Ginger Garlic paste 1/3 tsp
  • Carrots/Beans (optional)
  • Turmeric powder ¼ tsp
  • Red Chili Powder per taste. I put ½ tsp
  • Black Pepper Powder 3 turns of Pepper mill
  • Ghee 2 Tbsp.
  • Coriander powder ½ tsp
  • Cumin powder ½ tsp
  • Cinnamom ¼ tsp
  • Cloves ¼ tsp
  • Cardamom 2 seeds removed and ground
  • Star Anise only a half and leave as whole
  • Dried Mint leaves 1 Tbsp



  1. Wash Rice at least three times or until water runs clear and set aside.
  2. Grind Ginger Garlic and make a paste
  3. Chop Tomatoes, Onion and any other vegetables that you are adding
  4. Grind Cinnamon, Cardamom and Cloves and keep asside
  5. Open the can of Chickpeas, remove all the water from the can and rinse the Chickpeas at least once.

Making the Pulav

  1. Heat 1 Tbsp of Ghee in a large sauce pan.
  2. Add the ground Cinnamon, Cardamom and Cloves and Star Anise.
  3. After a few seconds, add the Onions. Saute for 2-3 minutes.
  4. Add Ginger Garlic Paste and Mint leaves. Saute for another minute
  5. Add the tomatoes and saute for 3 minutes
  6. Add Turmeric Powder, Chili Powder and Black Pepper Powder
  7. Stir and mix well
  8. Add the Vegetables, Chickpeas and Salt per taste
  9. Saute for 3 more minutes
  10. Add Rice and mix well
  11. Add 1 ½ cups of Water (The amount of water will vary depending on the type of Rice you are using)
  12. Pressure Cook for 3 whistles
  13. When the steam settles down, add 1 Tbsp of ghee on top and using a fork fluff the Rice and close the lid until ready to serve

Instapot version:

  1. For steps , 1 to 11, use the Saute mode on Instapot.
  2. For step 12, use the Rice mode

Alternatively, use the sealing position and pressure cook for 7 minutes.

Serve warm with Raita
