As has been my routine every year in April we wait for Spring recipes, I jump back one more time into the Winter recipes and post just one last comforting soup. Chicago is a tough land to live in. Winter almost seems never ending and Summer comes and goes on a flash. I am getting ready to think about the Garden though. I stopped by a nursery today to peek through what goodies they are planning to bring in for the Spring. And without intention, managed to get yet another houseplant and couple of Herb pots. I decided to use the Fresh Thyme from newly acquired herb plant. Hope you love this recipe as much as I did.

I am in a Christmas Coma. There has been an overdose of cookies and cakes all around me. This easy soup has served as a refresher and pallet changer for the last few weeks. I have another recipe for Green Peas Soup in the blog archive. This is another take on it. I added different herbs and added Chili Oil for the kick. I also used Almond Milk instead of cream so all in all this makes a healthier version. As with almost all my soups, this is a mild soup and goes well with simple salads or a cheese course.

Easy Marshmallow Mousse recipe.
And another birthday around our household. It’s crazy how fast these kids are growing up. They change so fast too. I see Annika to be such a mature child now and so hungry for knowledge and always curious. This birthday she didn’t want a cake. I think we have too much cake in the house, almost one every weekend. So I made this super fast Marshmallow mousse. It is sooo easy to make. It’s ready in about 30 minutes. It has this sweet chocolaty taste and you can literally go crazy with colors. Annika’s favorite is blue so I used blue.
Early this morning I woke up to a dense fog, intermingling of hot and cold. As I walked through my usual forest preserve , there was a stillness in the air. The air heavy with anticipation, waiting for the adventure ahead, the hustle and bustle of the coming week. As I stood there just for a second gazing at the stream almost disappearing in the fog, I remembered something I had read somewhere, “If you want something that you never had, you must be prepared to do something you have never done before”. I will leave you with that thought and the recipe for the Meringues.
